I often struggle with lighter dishes for spring and summer, but these are perfect for warmer weather. The kids really enjoy them, which is quite a surprise seeing as they &#8216;don&#8217;t like cod&#8217;!  <\/p>\n\n\n\n<p>It&#8217;s a really cheap dish; I use cod fillets from <a href=\"https:\/\/www.lidl.co.uk\/en\/p\/fish\/lighthouse-bay-2-cod-fillets\/p31759\">Lidl<\/a>, which are \u00a32.69 for two. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Recipe for cod fish cakes<\/h2>\n\n\n\n<p><strong>Ingredients <\/strong><\/p>\n\n\n\n<p>This makes 10 decent size fish cakes.<\/p>\n\n\n\n<ul><li>4 skinless, boneless cod fillets &#8211; approximately 500g <\/li><li>2 medium-sized potatoes suitable for mashing <\/li><li>1 cup breadcrumbs<\/li><li>1\/4 cup chopped fresh parsley<\/li><li>2 tablespoons freshly grated Parmesan cheese (cheaper Grana Padano works just fine) <\/li><li>2 finely chopped garlic cloves<\/li><li>1 1\/2 tsps salt<\/li><li>Pepper to taste <\/li><li>2 eggs, lightly beaten<\/li><li>Extra virgin olive oil <\/li><li>Polenta (optional) <\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" loading=\"lazy\" width=\"702\" height=\"527\" src=\"https:\/\/i0.wp.com\/www.theparentsocial.com\/wp-content\/uploads\/2020\/06\/IMG_3484-1068x801.jpeg?resize=702%2C527\" alt=\"Cod fish cakes\" class=\"wp-image-6948\" srcset=\"https:\/\/i0.wp.com\/www.theparentsocial.com\/wp-content\/uploads\/2020\/06\/IMG_3484.jpeg?resize=1068%2C801&amp;ssl=1 1068w, https:\/\/i0.wp.com\/www.theparentsocial.com\/wp-content\/uploads\/2020\/06\/IMG_3484.jpeg?resize=300%2C225&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.theparentsocial.com\/wp-content\/uploads\/2020\/06\/IMG_3484.jpeg?resize=768%2C576&amp;ssl=1 768w, https:\/\/i0.wp.com\/www.theparentsocial.com\/wp-content\/uploads\/2020\/06\/IMG_3484.jpeg?w=1404&amp;ssl=1 1404w, https:\/\/i0.wp.com\/www.theparentsocial.com\/wp-content\/uploads\/2020\/06\/IMG_3484.jpeg?w=2106&amp;ssl=1 2106w\" sizes=\"(max-width: 702px) 100vw, 702px\" data-recalc-dims=\"1\" \/><figcaption>The fish cakes prepped before being cooked <\/figcaption><\/figure>\n\n\n\n<p><strong>Method<\/strong> <\/p>\n\n\n\n<p><strong>1<\/strong>.&nbsp;Boil and then mash the potatoes<\/p>\n\n\n\n<p><strong>2.<\/strong>&nbsp;Meanwhile fill a pan with lightly salted water and place the cod fillets in so that the water covers them. Simmer until the cod flakes easily. Drain and flake with a fork<\/p>\n\n\n\n<p><strong>3<\/strong>.\u00a0Mix the flaked fish, potatoes, breadcrumbs, grated cheese, garlic, parsley,  eggs. If the mixture is too crumbly, add another egg. If too sticky, add some more breadcrumbs. I then dust them in some polenta, which gives a lovely crispness and crunch, but this is optional. If you have time stick them in the fridge to firm up  <\/p>\n\n\n\n<p><strong>5.<\/strong> Fry on a medium high heat in a well-oiled frying pan until they&#8217;re well browned on both sides.
